By popular demand I decided to throw this mini pecan pie recipe on the blog today. Not only is this a quick and easy recipe to throw together it's also the perfect treat to bring to all your holiday parties this season.
The pecan pie filling is a little different from your typical pecan pie, too. It is a little less wet and not as soft, it is crunchy and dry like brittle and tastes like candy. I also adore individual bite sized anything because it makes for a nice presentation and allows your guests a chance to try a little bit of everything. For Thanksgiving I made these along with mini apple and pumpkin pies for everyone to have one of each. They were a huge hit!
directions:
1. Once you've rolled out your crust use a 1" round cookie cutter and cut out individual circles. I got about 15 circles out of my pie crust. 2. With a cupcake or mini muffin pan place your individual pie crusts in each space. 3, Bake the crusts for 10 minutes at 350 degrees. 4. While the crusts are baking, combine the butter, powdered sugar and corn syrup in small saucepan over medium heat. Bring to a boil while stirring frequently. Stir in chopped pecans, turn off heat and mix well. 5. Pour your pecan mixture in each baked crust and bake for another 5-8 minutes. Garnish with a whole pecan and voila! Its that simple!
Put your cozy holiday decorations up, throw some Mariah Carey Christmas on Pandora, get these little pecan puppies in the oven, and invite your friends over because this is how you do a holiday party!
