Luscious Lemon Tart ;)

Easter and Passover have come and gone... so that means its basically Summer, right? Well I would like to think so. As the weather starts warming up and the layers of clothing start coming off all I can think about are the endless activities Spring and Summer has to offer us. Lazy beach days, late night bike rides, frozen yogurt runs and my favorite, backyard BBQ's with friends and family.

If you love entertaining and hosting stellar gatherings
as much as I do then you will love this gorgeous yet, delicious Lemon Tart. Add this recipe to your repertoire of crowd pleasing treats. It is light, refreshing and is so sophisticated looking you will without a doubt impress your guests.
LEMON TART RECIPE:

what you'll need:
  • 174 grams of maria biscuits 
  • 4 tablespoons of sugar
  • 4 tablespoons of unsalted butter (melted)
  • 1/3 cup of  lemon juice
  • 1/2 cup of condensed milk
  • 2 egg yolks
  • The zest of 1 lemon
  • 3 teaspoons of cornstarch
  • 3 tablespoons of light cream cheese
  • 2 tablespoons of unsalted butter (melted)
  • Chantilly cream
  • Lemon slices
  • Blueberry
DIRECTIONS:
  1. In a food processor, grind up the Marias cookies, sugar and unsalted butter until it becomes a mealy texture. No lumps. I used my Bullet which worked fine!
  2. Place the crumb mixture into your tart pan. Knead in every crevice with your hands. Cover entire pan.
  3. Bake pie crust at 350ºF for 12 minutes

  1. In a bowl gently mix condensed milk, egg yolks and lemon zest.
  2. In a separate bowl mix lemon juice and cornstarch - once combined slowly add the lemon mixture into the milk mixture.
  3. Once everything is well combined - pour your finished mixture into the baked pie crust.
  4. Bake at 340ºF for about 20 minutes.
  5. Once baked, let cool for about an hour - top with homemade whipped, lemons and blueberries. I added a fresh sprig of greens for some extra color.
  6. Refrigerate until ready to serve, ENJOY :)
